Let's Eat!!!!

Anyone that knows me knows that I loooooveee food. So I thought why not do a little cooking on the blog. Here’s a quick idea for dinner if you’re ever short on time J
Today Im making chicken stir fry, first I start off with a rotisserie chicken that I purchased at Sam’s club. Just so I would have to cook it myself (to save time) if you buy one that is pre-cooked try to find one that is not pre-seasoned, because you’ll be adding your own seasoning. You will need to chop up your chicken; because I started off with a whole chicken I just used my hand to pull the meat of the bones, then chopped it up a little more just to make sure I had small bite size pieces.

Next you need to cut up you vegetables; I just took some frozen vegetables out of the freezer (broccoli, cauliflower, and carrots) feel free to add the veggies of your choice. After chopping up your veggies, put some vegetable oil in a pan on med-high heat, then toss them in there. Your going to want to use the biggest frying pan you have! And keep and eye on them keep stirring so they don’t burn.

Next you need to season you chicken, with seasoning I’ve learn to not be stingy! Just on a good amount because this is going to add flavor to your vegetables also. I’ve found that in the past when I don’t season the chicken enough the veggies taste kind of bland. I used garlic pepper, seasoning salt, and black pepper for seasoning.  Also this would be a good time to start boiling your rice I usually make 2 cups ( and you know the rule for rice: however many cups of rice, you need twice as much water)

Next add your chicken to the frying pan ( you may need to add more oil or seasoning) after frying the chicken until it’s brown then turn down the heat a little and place top over the pan so the veggies can get soft.  Once you check to see the vegetables were to you liking then voila! Your all done.

Serve your stir fry over you rice.

And if you wondering what to make for dessert then here an idea ;)
